Sharlotka – Apple Sponge Pudding

Serve this quick and delicious dessert with dollops of crème fraîche or a scoop of ice cream.

1 cup plain flour 
1 cup caster sugar 
3 eggs 
A pinch of cinnamon, optional
3 tart apples, peeled, cored and thinly sliced
Icing or powdered sugar


Preheat the oven to 180°C/350°F/Gas 4. Grease an ovenproof dish and dust it lightly with flour.

In a bowl, combine flour, sugar, eggs and cinnamon, beat well to make a thick, smooth batter.

Arrange the apple slices on the bottom of the pan and pour the batter mixture over the apples to cover them completely.

Place in the oven and bake for 25-30 minutes till the batter is golden.

Check for doneness with a skewer which when inserted should come out clean.

Remove from the oven and leave to cool.

Sprinkle with icing or powdered sugar and serve warm or at room temperature.
