Mushroom Cappuccino


Mushroom Cappuccino with streaky baconIngredients          

3 tablespoons butter

1 tablespoon olive oil

1 onion, chopped
3 garlic cloves, chopped

250 grams/8 oz mixed mushrooms, sliced
1 ½ cups chicken or vegetable stock
Salt and pepper to taste
⅔ cup cream
⅛ teaspoon grated nutmeg or ground cinnamon

Method

1. Heat the butter and oil in a pan. Add the onion and garlic and sauté for a couple of minutes till the onion is soft but not brown.

2. Add the mushrooms and sauté for 1 minute. Add the stock and cook for 5 minutes till the mushrooms are soft.

3. Add the seasoning, and stir in the cream. Blend with a hand blender till smooth and frothy.

4. Pour immediately into cups and sprinkle nutmeg or cinnamon powder on top and serve.
