Parties and celebrations mean leftovers. Here are some tips on how to reuse leftovers so you can enjoy your festive dishes in completely new delicious avatars!
Salads and sandwiches: shred pieces of roast chicken/meats and use in salads or sandwiches.
Pasta, Rice and Noodles add to Mac and cheese bake; stir-fry with noodles or rice, or add to a tomato sauce to be poured over spaghetti.
Chicken Stock: Save the chicken carcass and boil with a few cups of water and some chopped onion and vegetable trimmings to make a rich chicken stock.
Fried rice: stir-fry rice with vegetables, soy sauce and/ or spices
Soup: add to a clear soup or vegetable soup to give it some bulk;
Croquettes: add a beaten egg, some grated cheese and seasoning, shape into balls or croquettes, roll in breadcrumbs and deep-fry till golden
Rice pudding: cook with sugar, milk and dried fruit
Bakes: mix with cheese or tomato sauce, sprinkle with breadcrumbs and bake.
Fritters: mix with beaten egg and spices and shallow-fry tablespoonfuls till golden on both sides.
Patties or croquettes: add egg, chopped boiled vegetables and spices and shape into patties or croquettes, dip in egg and breadcrumbs and shallow-fry;
Shepherd pie: add milk and butter and spread over cooked minced chicken, meat or vegetables and bake
Spiced mashed potato: add chopped onions, green chillies, fresh coriander and some butter or mustard oil Stuffed vegetables: add spices and use to stuff blanched capsicums, tomatoes and aubergines (n scoop out and mix with potato) bake till golden.
Stuffed breads and sandwiches: flavour with herbs and spices and use to stuff flatbreads or toasted sandwiches.
Croutons: cut into cubes and bake or fry till golden and crisp
Flavoured bread crumbs: mix breadcrumbs with garlic, herbs, parmesan cheese and lemon juice and use to coat fish, chicken, mushrooms or mixed with butter and top roasted vegetables.
Garlic bread and bruschetta: brush with garlic butter and toast in the oven. Serve as is or top with chopped tomato. garlic and basil and drizzle with vinegar and olive oil.
Panzanella or Italian bread salad: chop or tear bread into pieces and add chopped tomatoes, basil, cucumbers, and garlic vinaigrette.
Topping: crush crumbs and sprinkle over milk shakes, smoothies, fruit yoghurt, and ice cream
Pie crust: crush and mix with butter and press into a pie plate or small tart moulds and refrigerate. Fill with fresh or tinned fruit and cream for an instant dessert.
Desserts: Crumble or chop and add to rice pudding (kheer) carrot halwa, smoothies or or ice cream
Topping: crumble and sprinkle over desserts.
Tea or Juices
Freeze in ice cube trays and use in iced tea or mixed fruit punches.
